Ingredients:
for the salad
• 2 large peaches, cut into wedges
• 1 Tbsp extra virgin olive oil
• 1 Tbsp Comvita Mānuka Honey MG30+
• 150g rocket or baby spinach or a combination
• 1 avocado diced
• ¼ red onion sliced
• ½ cup goat’s cheese, crumbled
• ½ cup almonds, roasted
• 2 Tbsp sunflower seeds
• Lime wedges, to garnish for the honey vinaigrette
• ½ cup extra virgin olive oil
• 2 Tbsp balsamic vinegar
• Pinch of salt
• 1 or 2 Tbsp Comvita Mānuka Honey MG30+
Method:
The honey glazed peaches:
Add oil in a large griddle frying pan and heat on medium-high heat. Once the oil is heated, add the Mānuka honey and peach slices and grill until golden on one side. Remove and leave to cool
In a large bowl, add all the salad ingredients and toss to combine. Top with peach slices and lime wedges.
To make the honey vinaigrette:
Whisk all the ingredients in a small bowl until well combined and drizzle over the salad. Serve immediately.
